This is my recipe for Tomato & Basil soup. Its hearty, healthy, and super easy to whip up. I like to eat my soup with a nice crusty piece of bread or a cheesy grilled cheese sandwich.
Tomato & Basil Soup
- 1 Onion diced
- 1 glove garlic chopped
- 1 carrot peeled and chopped
- 1 can of diced tomatoes
- 1 tablespoon extra virgin olive oil
- 3 teaspoons fresh basil chopped
- water
- salt to taste
- vegetable/chicken stock cube (optional)
Heat oil over medium heat in medium pot. Add in the onions and garlic and cook until the onions start to soften and go clear. Add in chopped carrot, tomatoes, 1 can of water, basil, salt and stock cube if you are using one. Bring to boil and cook until the carrots are tender and the liquid is reduced. Allow to cool then puree with a hand blender or food processor to the desired consistency. Return to the pot and bring back up to a boil to reheat and serve with crusty bread.
