Yellow Rice

Yellow Rice
  • 1 Tablespoon olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1/2 teaspoon sazon seasoning (*see note)
  • 1/2 to 1 teaspoon Salt (**see note)
  • 1/4 cup  canned chopped tomatoes
  • 1 1/2 cup long grain rice
  • 3 cups chicken broth
  • 1 cup frozen peas
  1. In a large sauce pan heat the oil over medium heat.
  2. Add the cumin, oregano, bay leaf, sazon, pepper and salt. Cook for about 1/2 minute.
  3. Add the rice and canned tomatoes and stir for one minute.
  4. Add the chicken broth and frozen peas.
  5. Bring to a boil. Once the boil is reached turn heat to low and cover. Cook  for 20 minutes undisturbed. When the 20 minutes is up turn off the heat and fluff rice with a fork. Cover for an additional 5-10 minutes before serving. Goes great with my Black Bean recipe.
Notes:
* Sazon seasoning is a combination of herbs and spices used in Latin cooking. It can be found in the ethnic or spice/herb section your grocery store.
** Depending on how salty your chicken broth is you may want to use less or more salt. Season to taste.
