Today is pancake day! Also know as Fat Tuesday or Shrove Tuesday, occurs the day before Ash Wednesday (the first day of Lent). I like any excuse to eat pancakes so why not make my cornmeal pancakes today!
Cornmeal Pancakes
- 1 cup boiling water
- 3/4 cup coarse stone-ground cornmeal/Polenta
- 2 tablespoons butter melted
- 2 vegetable oil
- 2 eggs, beaten
- 1 1/2 cu buttermilk
- 1/4 teaspoon salt
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup flour ( I use 1/2 cup white & 1/2 cup wheat flour)
- Oil for pan
- In a bowl combine the polenta and boiling water, mix well and allow to sit for 5 minutes.
- Add the melted butter and oil to the polenta.
- In a another bowl whisk the eggs, add buttermilk and whisk again
- Whisk the wet ingredients into the cornmeal mixture.
- Add flour, salt, baking powder and baking soda them combine just until mixed.
- Heat your non-stick pan over medium heat and wipe down with oil to prevent sticking.
- Ladle 1/4 cup to 1/2 cup of the batter and cook until tiny bubbles start then flip and cook until done.
- Serve with maple syrup, honey or fresh fruit.
